Chia's to the Weekend


Ello peeps! It's almost Easter :) I'll be going to church, running 10.5 miles and hanging with fam tomorrow. All of which I am very excited for. I feel like I've been MIA for a bit so I'll just do a recap of the past couple days..

Thurday was an interval run day and Friday was chest, biceps and triceps. Nothing too crazy or unusal went down there.

Friday I tried a new recipe! And I am uber excited about it :) It was vanilla protein chia pudding. I briefly touched on chia seeds about a week ago. They are in fact the same seeds used in the infamous Chia Pets. Don't let that scare you off though! Chia seeds are both nutritional and medicinal. Born a member of the mint family (it doesn't taste like mint), it is usually a black or white seed and they are native to the Mayan and Aztec cultures. They help reduce blood pressure, stabilize blood sugar, provide energy, they have anti-inflammatory properties, they promote weight loss, have antioxidants, and lastly are high in protein, fiber and omega-3. The little seed has a lot of power! Chia seeds absorb about three times their size in liquid. Often times people mix one Tbsp of chia seed with two Tbsp of water and let it sit for a few until it forms a gel and use it as an egg replacement in baking. Chia seeds are just as nutritious as they are diverse. They can be used in basically anything.


Vanilla Protein Chia Pudding
3 Tbsp Chia Seeds
1 cup Unsweetened Almond Milk
1 scoop Vanilla Protein Powder (or to mix up the flavor you can use any flavor of protein)
A dash of Cinnamon

Blend all of the ingredients together in a blender and pour into a container. Leave covered in the refrigerator overnight. The seeds will absorb the almond milk and protein and form a pudding like consistency. If you like more of a tapioca like texture then do not blend the ingredients together, simply mix them and leave to chill overnight. Top with fresh fruit or nuts and enjoy!

I've been running through veggies like crazy.. like that's something new.. so I had to make a quick trip to the grocery. I prepped some roasted pepper, sweet potato wedges, spaghetti squash and ground turkey for the upcoming week so I wouldn't have to worry about it tomorrow with all of the festivities it holds.
