Mind Over Mondays

Today started out with freezing rain and gray skies for days. It was my first day back to work in a week and it was Monday. This all seems like a recipe for disaster. Alas my fine friends, it was a grand day :) I put my mind over matter attitude in my pocket and strutted myself to the gym before work. That always make me feel like I can conquer anything the day is going to throw at me. And it worked! Today was no walk in the park but my attitude made it somewhat pleasant.

Nothing too exciting happened today though. Gym. Work. Applebee's. Watched Red Dawn (odd ending but overall good movie). And here I am now. Ready and waiting to fall asleep :)

I get tomorrow off work. I know, another day off already! I think they are just trying to wean me off of my vacation slowly haha.

I put together a little midnight snack because my stomach simply wouldn't stop talking to me and this is what I had.. Recipe of the day/night:

Healthy Cottage Cheese Dessert

1/2 c low fat cottage cheese
1 Tbsp slivered almonds
dash cinnamon
drizzle maple syrup
Chocolate chips if desired

Mix it all up in a bowl and whabam. High protein, low fat sweetness.

Until tomorrow, I'm hittin' the hay. This chica is pooped! Nighty :)
