WIAW 3/20/13

Yooooooo, it's Wednesday. In other words.. the week is half way over! :) Not only that but it's What I Ate Wednesday in these whereabouts.

I started out this morning (EARLY) at 5:45 with my chocobanana protein shake. I tackled the gym before work today because I had a feeling that after work I would want to come home and just relax, and I was right! Today was core and shoulders day.

I got ready and made it to work. It turned out to be a great day! Lot's of fun and laughing. That hasn't been the norm recently so it was a nice refresher :)

By the time 9:00 rolled around my stomach was lightweight screaming at me. I had a lite Greek yogurt to tide me over until lunch.

Lunch turned out to be quite the pleasant surprise! At 12:35 a fine young lovely took me out to eat at Red Robin (YUMMMMM). I love me some Red Robin! While they have gluten free hamburger buns, I don't find them sensible. They aren't 100% satisfying. Knowing what real buns taste like and comparing the gluten free ones I've decided I'll just avoid the disappointment. So, I get the Lettuce Wrap Your Burger. It can get a little messy but it's still delicious :) I got the Grilled Turkey with extra pickles. Burgers are nothing to me without pickles, then again most of you probably think a burger is nothing wrapped in lettuce without a bun.. oh well, we all have our standards I suppose ha ;p On the side I got steamed broccoli and carrots. Fiber fiber fiber.



Around about 4:30 a snack was in order. I brought sweet potato wedges that I baked up yesterday. The sweet potatoes that my Kroger provides are so hugesque that I can easily divide one into three servings. It makes it easy to just slice one and bake it and take it as I need it throughout the week.

I made it out of work by 5:35 today and got home by 6:00 (remember when I said it was an awesome day? This certainly contributed!). I got home and made spaghetti squash with baked chicken. It was fantastic. So much so that I figured I'd leave the recipe for you :)


Easy Skettie Squash
1 c cooked spaghetti squash
1/2 c roasted peppers
1/2 c pasta sauce
1 chicken breast
1 Tbsp feta cheese
1/2 c raw spinach
basil
oregano
salt
pepper
crushed red pepper

For starters, my advice to you if you are busy throughout the week, bake your spaghetti squash in advance and remove the seeds and fork the flesh out into a Tupperware container so it is at your fingertips throughout the week. Same with the peppers. Make those those in advance, not only to add to this dish but they are great to toss into eggs, salads, anything really. Season the chicken with the basil, oregano, crushed red pepper, salt and pepper. Bake at 350 degrees. Once the chicken is cooked through, heat the squash, peppers, pasta sauce and spinach in the microwave. Cut the chicken while everything else is heating and once it is finished mix it all together! Top it with feta cheese and badabing badaboom, you're golden :)

For my late night snack at 8:30 I had a half cup of Edy's Slow Churned Peanut Butter Cup Ice cream and a few Salt & Pepper Pop Chips. Salty. Sweet. Bliss.
